Here's one of my favourite recipes:

New York Cheesecake

(preheat oven to 400 degrees Farenheit)

4 packages of cream cheese
2 cups sugar
1 (500ml) tub of sour cream
2 eggs
2 tablespoons of flour
1 tablespoon of vanilla
1 teaspoon of baking powder
1 tin of cherry pie filling (or apple or blueberry or strawberry)

Crust:
Package of graham wafer crumbs
1/2 cup of sugar
1 cup of butter (melted in microwave)

Mix cream cheese and sugar until thoroughly combined and cream cheese is fluid. Add complete tub of sour cream, mix thoroughly. Fold in eggs, again mix thoroughly. Add flour, vanilla and baking powder -- mix by hand until smooth.

In a spring loaded pan (the kind with the ring that you can undo with a spring clip) add an entire box/bag of graham wafer crumbs. Sprinkle in sugar and mix by hand until sugar and crumbs are evenly dispersed. In a microwave safe dish, nuke the butter until melted. Add the butter evenly to the crumb/sugar mix and then pat down firm on bottom of pan to form the crust.

Pour in the cheesecake batter. (See below ** for alternate choice)

Put cake into oven at 400 degrees for about 20 minutes (or till top of cake turns a bit brown). Reduce heat to 350 and let cook for about 1.5 hours -- cake will rise/puff up and often will crack as it bakes. Use the toothpick test (or clean fork test -- put fork into cake and if batter comes off on it, keep in oven a bit longer).

Top with pie filling -- cherry, blueberry, apple, strawberry -- you find in the baked good isle at your grocery store.

Another option is to mix some brown sugar, cinnamon and powdered sugar in a bowl and sprinkle it on top of the cake WHILE IT IS HOT.

** To make things funky and add different textures: Before you pour the batter into the pan, take 1/3 cup out and set aside. Now pour batter into pan. With the 1/3 cup of batter add some melted chocolate and kahlua and mix until blended. Pour the chocolate/kahlua into the center of the cake so it forms a circle. Take a knife and dip deep into the centre of the cake and "draw" a big circle spiral starting from the centre out to the edge. This will give you a marbelized chocolate/khalua cheesecake.

For best results, let cake sit in fridge a couple hours before serving (overnight is fine too) -- add pie filling topping minutes before you serve.

Good Friends, Good Times Taco Dip

(This is a recipe I learned while working at a mexican restaurant)

1 package of cream cheese
1 (500ml) tub of sour cream
1 package of taco seasoning mix (Old El Paso is good)
2 cups of chopped iceberg lettuce
1 tomato
1 red onion, chopped
1 cup of salsa (hot or mild, your choice)
Sprinkling of shredded Kraft tex/mex cheese
Guacomole if desired.
Nacho chips

Mix the cream cheese and sour cream until thoroughly blended. Add the package of taco seasoning and mix again until completely blended. (This, by the way, is great enough on its own with nacho chips if you don't want to do the rest).

Take a plate and plaster the cream cheese/taco seasoning mix onto the bottom. Spread evenly and thickly. Add layer of shredded lettuce. Add layer of chopped tomatoes and onion. Sprinkle top with shredded cheese. In centre on one side, put dollop of salsa. In centre on other side, put dollop of guacomole.

Add nacho chips around edge of plate. Put extra chips in basket for easy dipping access.

Dig in and enjoy!

Tasty Bean Dip/Side

This dip can be enjoyed as a side dish without chips

Mix together and Rinse well
1 can Black Beans
1 can Black Eyed Peas
1 can White Corn

Chop up and add to bean mixture
1 Green Pepper
2 or 3 whole Jalapeno Peppers
1/2 tsp Minced Garlic
1 Tbsp Cilantro
1/2 Cup Italian Dressing

Serve with or without tortilla chips (Tostido Scoops work great)

Bourbon Chicken

2 lbs. Boneless Skinless Chicken Thighs (cut into 1 inch chunks)
2 Tbsp. peanut oil
1 medium onion (chopped into inch to 1/2 inch chunks)

Sauce
1/4 cup Soy Sauce
3 Tbsp. rice vinegar
1/4 cup bourbon
1/3 cup brown sugar
1 green onion (chopped)
1 tsp. powdered ginger
2 cloves garlic(minced)

Garnish
2 Tbsp toasted sesame seeds(optional)

Whisk all sauce ingredients together. Set aside

Brown chicken and onions in very hot wok or fry pan with peanut oil until lightly browned

Add sauce and reduce heat to medium/low

Cook uncovered until sauce forms a glaze.

Add optional sesame seeds and serve with rice or lo mein.

Marinated Scallops Wrapped in Bacon (yes, these were what I made Dagh for our anniversary since he likes seafood so much) Smile

Ingredients

3/4 Cup Maple Syrup
1/4 Cup Low Sodium Soy Sauce
1 Tablespoon Dijon Mustard
12 Large Sea Scallops, halved
12 Slices Smoked Bacon, halved
24 Toothpicks
2 Tablespoons Brown Sugar


Stir together maple syrup, soy sauce, and Dijon mustard in a bowl until smooth. Add the scallops, and toss to coat. Cover bowl with plastic wrap, and marinate at least one hour.

Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with a sheet of aluminum foil.

Arrange bacon pieces on baking sheet so they do not overlap. Bake in preheated oven until some of the grease has rendered out of the bacon; the bacon should still be very soft and pliable, about 8 minutes. Remove bacon from the baking sheet and pat with paper towels to remove excess grease. Drain or wipe grease from the baking sheet.

Wrap each scallop piece with a piece of bacon, and secure with a toothpick. Place onto a baking sheet. Sprinkle the scallops with brown sugar.

Bake in preheated oven until the scallops are opaque and the bacon is crisp, 10 to 15 minutes, turning once.

Then, gorge Very Happy

Apple Berry Salsa

2 Granny Smith Apples (cored and peeled)
1 Kiwi (peeled)
1 Orange (peeled)
1 cup Strawberries
2 Tablespoons Apple Jelly
2 Tablespoons Brown Sugar


Chop apple, kiwi, strawberries, and oranges into small chunks
Add Jelly and Brown sugar
(or just throw everything in food processor and voila!)
Serve Chilled with tortilla chips
